If you need a basic salad that takes almost no time at all to make, this is the perfect recipe. This basic Italian salad can be eaten as a side, or as a quick weekday meal.

Basic Italian Salad

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 2 - 4 servings

Ingredients

  • 2 heads romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 4 spring onions, diced
  • Dressing:
  • 1/4 cup + 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp coconut sugar (dissolved in 1 tbsp hot water)
  • 2 tsp lemon juice
  • 1 tsp minced garlic
  • 1 tsp whole grain mustard
  • 1/4 tsp Himalayan salt
  • 1/4 tsp pepper

Instructions

  1. Prepare the vegetables, then put them into a large serving bowl.
  2. In a small bowl, combine the dressing ingredients and whisk well.
  3. Serve the individual portions of salad, and drizzle the dressing on top.
